Fill them up with oozing creamy vanilla custard and you won’t be able to wait till you put them in your mouth and wait for the taste of vanilla and nutmeg to explode in your mouth.

Ingredients
FLOUR 2 &1/2C
YEAST 2 TBSP
SUGAR 1/3 C
OIL 3 TBSP
SALT ¼ TSP
EGG YOLKS 2
EGG WHITES 2(FORR EGG WASH)
MILK 2/3 C
VANILLA ESSENCE ½ TSP
POWDERED SUGAR FOR COATING ¼ C
BUTTER 2 TBSP FOR COATING
NUTMEG ½ TSP
Ingredients for Custard
MILK 1 AND ½ C
SUGAR 5 TBSP
CUSTARD PWD 4 TBSP

Instructions
Step 1
In a mixing bowl add 1 c of Flour to this add 2 tbsp if instant yeast. 1/3 C of sugar, preferably powdered.
Now add1 and ½ tbsp of melted butter and 1 and ½ tbsp of oil.(or you can add 3 tbsp of oil)
Add 2/3 C of Luke warm milk, 2 egg yolks. Leave the egg whites aside you can use them for the egg wash before baking.
Step 2
Now keep covered for 6-10 min and let the yeast activate. You will see bubbles on the mix that means the yeast is active. (In case you do not see any bubbles discard the mixture, the donuts will not rise then)
Step 3
Now add the remaining 1 and ½ C of flour to this mix , g grate some nutmeg on the flour about ½ tsp to 1 tsp . Add ½ tsp of vanilla essence add ¼ tsp of salt.
Now mix with a spatula, occasionally scrapping the sides. You can sprinkle some flour to gather the dough since it is very sticky.
Step 4
Once the dough comes together. You have to knead with hands. you have to pull and stretch the dough to relax the gluten .you can bang the dough a couple of times. Knead for around 10-15 min.
Now seal the dough, keep in a warm place allow to rest for 2 hrs cover with kitchen towel.
If you want to skip the kneading, just add time frame. That is preparing the dough and let it rest overnight in a refrigerator. You won’t need to knead this dough.
Step 5
In either case you will see the dough has raised twice its size. Now punch down the dough and make two portions out of it. Now roll out disks of around 1 cm thick and cut out disks of 2.5 inch diameter approximately with a cookie cutter or a drinking glass.
Step 6
Place this round disk on a baking tray lined with parchment paper. Separate the with 1.5 inches as they tend to rise. Now cover with a kitchen towel and allow proofing for second time for around 15-20 min.
Preheat the oven to 350C to 375 C. Let it pre-heat for 15min.
Step 7
In the mean while let us prepare the custard. In a sauce pan add 1 and ½ c of milk. Add 5 tbsp of sugar and 4 tbsp of custard.mix properly and start cooking. Keep whisking continuously as you cook else the custard may stick to the bottom and lumps will be formed.
This mixture thickens considerably. Cook for 4-5 min. Allow to cool.
Step 8
Now the donuts rise after second proofing. Add around 1 tbsp of milk to the egg whites we have kept aside. Whisk. Baste donuts with egg wash gently not disturbing the shape. This egg wash gives the donuts a golden brown color. Now bake the donuts for 8-10 min.
Step 9
They give out a lovely yeasty flavor of freshly baked bread while baking. Remove donuts from oven and while they are warm baste with melted butter and immediately roll them in the powder sugar and allow to cool.
Step 10
In the mean while , take a piping bag cut off the tip and fix it with a nozzle icing tip.
Now add the custard and preare the piping bag.
Step 11
Now make slits in the now cooled donuts and fill the donut with creamy vanilla custard. And your vanilla filled custard donuts are ready
Step 12
Instead of custard you can pipe jam/fruit preserve or nutella.
Enjoy them warm.
