MANGO SHEERA | MANGO HALWA | MANGO THICK PORRIDGE
Mango Sheera/ halwa is a must try dish to be Done in the Mango Season. This halwa/ Sheera has a melt in the mouth texture accompanied by the Superior Alphanso Mango Flavor and A hint of saffron and Cardamon. Add Dry fruits of your choice and enjoy . Do not miss making this delicacy before the mangos this Season.
INGREDIENTS
1 C = 1 KATORI -= 150 ML
SEMOLINA 1.5 C
GHEE ¾ C+ 2 TBSP
WATER 1.5 C
MILK 3 C
SUGAR 1 C
MANGO PUREE 2 C
(3 LARGE ALPHANSO MANGOS)
CASHEW PICIES 2TSP
ALMOND SLICES 8-10
SAFFRON STRANDS 7-8
CARDAMON POWDER ½ TSP
· In an Non Stick Wok, Add 1 C of Clarified Butter /Ghee, and Allow it to melt. Add 1.5 C of Coarse Semolina(jada rawa) and roast it for 4-5 min.
· In the mean while , Boil 1.5 C of water and 3 C of Milk( For 1 C semolina: 3 C of liquid).
· To the roasted semolina add Some Almond Silver and Some Cashew pieces. Mix well.
· Now Add the hot boiling water to the Semolina and Allow it to Cook . The boiling water will puff up the rawa and it will become nice and Soft, resulting in a soft spongy halwa.
· Now add the Hot Milk to this Semi cooked Semolina. Add 1 C of sugar and Mix to Incorporate.
· Now Cook Covered for 3-4 Min
· Uncover And Now Add the Spices, Cardamon powder ½ tsp(we don’t want to over power the mango flavor, add just a hint)
· Add 2 tbsp of milk infused with 8-10 strands of Saffron.
· Add the puree of two Mangos mix well. Now fry some Halved cashews Golden Brown and them to the Sheera.
· Now Serve it warm
