Makhana Kheer with Jaggery |Fox nut seed porridge | Lotus Seed Pudding

Try this healthy delicious creamy rich textured porridge made with sautéed and puffed up fox nuts seeds. This Kheer or porridge is Spiced with the flavors of nutmeg, cardamon and saffron and rose petals.

This porridge is made with the goodness of Jaggery instead of white sugar .The Rich creamy texture of this Kheer or porridge is complemented with bite size dry fruits like , Cashew, almonds and Pistachios , you can add crumb size Makhana too(like we have done here)


Makhana or Fox nuts are used throughout India in various recipes.

Makhana seeds are extremely nutritious and should be included in your daily diet as

  1. Their low calorie and can be used for weight loss

  2. low in cholesterol

  3. low in fat

  4. low in sodium

  5. Diabetic friendly as they have a low glycemic index

  6. They are they are high in fiber

  7. They rich in protein

Normally if you add Jaggery to boiling milk it will curdle as Jaggery contains a lot of lot of impurities which are which are mostly acidic. Therefore this causes the milk to curdle.

The best way to add Jaggery to milk is to firstly dissolve the Jaggery in the 1 tbsp of of water and keep it in the liquid state and allow it to completely dissolve and the cool down.

Similarly prepare the milk by boiling all the spices and allow to cool completely, Then add the Jaggery liquid and to the cooled milk mixture and give it a nice stir

This Kheer can be served as hot as well as cool and chilled from the refrigerator

Tips and Tricks

  • Add Rose Petal /Gulkand if you like the rose flavor.

  • Chill in the refrigerator for 4 to 8 hours, allow the spices to mature.

  • Add the dry fruits such as almond silvers, pistachios in bite-sized .

  • Add the coarsely ground Makhana as or chopped Makhana pieces.Tandai is spiced version of masala milk with little bite. The taste is flavored with fennel seeds, black peppercorn, poppy seeds, cardamom and nutmeg these spices dominate the flavors of this cooling drink. A lot of dry fruits are added to thicken the milk in as in the paste form as well as in the crumb form

Adding rose flavor either in the form of Gulkand or in the form of Essence, steps up the delicious factor of this milk concoction Add saffron, the king of spices to the to give a golden tinge to the to this


Ingredients

  1. Maakhana 1.5 C

  2. Jaggery ¾ C

  3. Water ½ C

  4. Ghee 1 tbsp

  5. Mik 1.5 L

  6. Safforn 1 pinch

  7. Almonds 10-15

  8. Kajus ¼ C

  9. Nutmeg 1 tsp

  10. Cardamon Powder 1 tsp

Instructions

  1. In a wide bottomed, Wok, add 1tbsp of ghee and allow it to melt.



2. Add 1 C of Makhana and Slow roast it for 5-6 Min. Once it is Done they become Crunchy and they can be crushed with your hand. Now Allow to Cool.



3. In the same wok, add 1.5 liters of full cream milk, Allow it to boil and then keep it to simmer on the sides.

4. Mean while add the Makhana into a mixer jar. Add 8-10 cashew pieces to this fox nuts. Adding cashews will thicken the Kheer and give it a rich creamy texture. Now grind the cashew pieces and Makhana into a fine powder. You can keep some aside and grind it into a course powder or bite sized pieces to give texture to the Kheer



5. Add these pieces only if you like pieces in your Kheer else you can finely ground the entire lot of Makhana.

6. Now Add the Makhana-Cashew powder to the Simmering Milk, as the milk condenses the Kheer thickens.


7. Now Add 8-10 strands of Saffron soaked in 1 tbsp of milk for 30 min. This gives a nice golden color to the Kheer.


8. Add Spices like Nutmeg and Cardamon. Allow to simmer for another 10 min. Shut off the gas Stove and Allow to cool. Add dry Fruits of your Choice like Cashews,



9. In Another pan add ¾ C of Jaggery and ½ C of water. Heat and allow the Jaggery to melt completely and allow to cool.



10. Now add the Cooled liquid Jaggery to the cooled Spiced Kheer and Give it a nice Stir.

Chill in the refrigerator for 4 Hour and Serve Completely Chilled.

Garnish with Almond Silvers, Rose petals, pistachios .
