Healthy Dry Fruit Wheat Jaggery Ladoos| Winter Special Recipe
Healthy Wheat flour, Dry fruit Ladoos, made with goodness of Jaggery are loaded with energy from dry fruits and oil seeds, are a legacy gift from the Indian Cuisine. . The Recipe of these ladoo has been passed from generation onwards. These are made with different ingredients in different House holds.
I’m sure everyone becomes nostalgic with the ladoo made by their mom’s and grandmothers.
Poshtik ( ‘poshtik’ literary mean healthy) Ladoos are a solid substitute for the preservative filled energy bars. These Ladoos are made at least once in the cold winters days and enjoyed for their Flavors and grainy texture.
As Always these taste better the next day as the flavors of nutmeg cardamon and poppy Seeds mature.
These ladoo are also popular amongst the new mothers.

Tips and Tricks
1. Use coarsely ground wheat flour. If not use 1 &1/2 C of regular wheat flour and add ½ c of semolina
2. Otherwise the ladoo will not have the necessary coarse texture
3. While fring the dink/ edible glue,, be sure that the ghee is really hot(smoking)
4. Be sure to roast and grind the poppy seeds, this brings out their flavor
5. Freshly grate the nutmeg instead of using readymade nutmeg powder.
6. De-shell cardamon pods and grind the seeds instead of ready made cardamon powder. It makes a big difference in the flavors.
7. As Always these taste better the next day as the flavors of nutmeg cardamon and poppy Seeds mature.

Ingredients
Whole Wheat Flour 2 C
Ghee 1 C + ¼ C
Sesame Seeds 2 tbsp
Roasted Flax Seed Powder 2 tbsp
Desiccated Coconut ½ C
Chopped Almonds 2 tbsp
Chopped Walnuts 2 tbsp
Chopped Cashew 2 tbsp
Dry Date’s powder/ Kharik powder 2 tbsp
Grated Jaggery 1.5 C to 2 C
Cardamon Powder 1 tsp
Nutmeg 1 tsp
Edible Glue/Dink 2 tbsp
Poppy Seeds 1 tbsp

Instructions
Step 1
In a Wok, Start roasting 2 C of Whole Wheat Flour, Roast for a minute or two.
Add 1 C of Melted Ghee. Mix it nicely and keep it on low Flame and occasionally keep stirring.
Step 2
Mean while in a pan, add 2 tbsp of Sesame seeds.
Roast till the sesame seeds puff up and start spluttering. Keep aside and Allow to Cool.
Step 3
To the same pan, Add ¼ C of Ghee, heat it till the ghee allows to smoke..
Now drop 2 tbsp of Edible Glue or Dink to this ghee. It instantly blooms up as it fries, now remove as soon as possible
Step 4
To the same Ghee, add roughly chopped 2 tbsp of Almonds, 2 tbsp of Walnuts and 2 tbsp of Cashew.
Now fry them till they become crunchy.
Step 5
Now add ½ C of desiccated Coconut to the pan and fry them till it become slightly pink. Keep aside and allow to cool
Step 6
Also dry roast 1 tbsp of poppy seeds for a minute or two.
Step 7
Now grind the Poppy seeds , Edible Glue into a Coarse powder.
Now mix the desiccated coconut and the ground mixture, add the dry fruits .
Step 8
Add 2 tbsp of Fried Dry fruits and the sesame Seeds. Give it a nice mix.
Step 9
After 20-25 Minutes of roasting the wheat flour Add 2 tbsp of water and mix. This ensures the wheat flour has cooked properly. Roast for 5-7 min more. Then add this to the mix.
Step 10
Now add 1 tsp of Cardamon Powder and freshly grate 1 tsp of Nutmeg. Add 2 tbsp of Kharik Powder /Dry dates powder.
Step 11
Now as the mixture is warm, add the 1.5C or 2 C of Jaggery. Mix all the ingredients nicely. Now bind into ladoo and enjoy.
