Eggless Sugar-Free Whole Wheat and Oats Cookies made with Jaggery are healthy delicious and Easy to make tea time snack, even if you are a rooky Baker. You can add nuts like Almonds, Cashews and Walnuts. Add Healthy Seeds like Melon Seeds, Chia Seeds and Flax Seeds and dried fruits like Raisins, candied Orange Peels , Dried Apricots and Cranberries. You can add the all time favorite choclate chips.
These Cookies turn out crunchy on the outside and soft and chewy on the insides. Store them in an airtight container.
Enjoy them warm with a Cup of Coffee or a glass of Milk or some Masala Chai

Ingredients
1. Whole wheat flour/Atta 1 C
2. Oats Flour 3/4 C
3. Regular Oats 2 tbsp
4. Jaggery Powder 1 C
5. Baking Soda 1/2tsp
6. Cinnamon ½ tbsp
7. Vanilla Essence 1tsp
8. Orange Peel 2tbsp
9. Ghee ¾ C
10. Raisins 1-2 tbsp
11. Milk ¾ C
12. Nuts ¼ C
13. Chocolate Chip 2 tbsp
14. Flax Seed 2 tbsp
15. Chia Seeds 1 tbsp
16. Melon Seeds 1 tbsp
Instructions
Step 1
Preheat Oven to 350F or 180 C. line a Baking Tray with parchment paper or take a non-stick pan.
In a mixing Bowl, add 1 C Whole wheat flour.
Add ¾ C of Oats Flour(i.e. just ¾ C regular Oats ground in a mixer).
Add 2tbsp of regular Oats , ½ tsp of Baking Soda, 1 tbsp Cinnamon.

Step 2
In another mixing Bowl add 3/4 C of ghee/clarified Butter or Unsalted Butter.
To this add fine 1 C of Jaggery powder. If the powder is not fine sift it and pulse the remaining through a mixer to fine powder.
Beat for 2-3 min till the mixer becomes creamy.
Add 1 tsp of Vanilla Essence.
Step 3
Now add the dry mix of Oats and Whole Wheat Flour in two batches.
Befiore mixing add 3/4 C milk
Add 2tbsp of roasted Flaxseed powder
Add 2 tbsp of Chia Seeds
Now mix with a Spatula. Mix the dough properly. It becomes sticky dough.
Step 4
Add 2 tbsp of Choclate Chips.
Add 2tbsp of Glden Raisins
Add 2 tbsp of Candied Orange Peels
Step 5
Now make Balls of 1.5 inch and place on a baking tray. Keep at least 1 inch between.
Step 6
Decorate with Melon Seeds for added Crunch
Step 7
Bake for 18-20 min for Soft Chewy Cookies and 22 min for Crusty Cookies. Now decorate with melon seeds for added crunch. Thier Color should come out nice gloden brown.
Step 8
Now your Yummy Cookies are ready. Enjoy them warm with a Cup of Coffee or a glass of Milk or some Masala Chai.
