Banana bread brings out the best flavors of banana and oats and vanilla. Scrumptious to taste, flavorful, crumbly and melt in the mouth soft textured, the flavor of this bread will explode in your mouth. Have it guilt-free as we have added oats flour instead or all-purpose flour so it is gluten-free also we have used brown sugar, but you can substitute with honey, maple syrup or agave. Add a healthy mix of nuts, flaxseed, and chia seeds to add crunch to the bread. Make it once and it will be a repeat recipe for your family. It is not too overtly sweet like a cake, so can be eaten best with a marmalade or jam of your choice. 3) BAKING POWDER 1 TSP
4) BAKING SODA 1 /2TSP

Instructions
Step 1
Peal three over ripe bananas.
Mash them with a fork.
Step 2
In a mixing bowl break two eggs and whisk them with a hand whisk
Step 3
Add ½ C of Oil to this mix and ½ C of curd
Add 1tsp of Vanilla essence.
Add mashed banana and 1/2 C of brown Sugar finely ground.
Whisk to incorporate all the wet ingredients properly. Do not over mix with a mixer use hand whisk only.

Now in another mixing bowl take 1.5 C of oats flour (it’s just 1.5 cup of regular oats ground to fine powder) Add 1 C of regular oats to it

Add 1tsp of Cinnamon, 1 tsp of baking powder 1 tsp of Baking Soda. Mix it with a Fork

Now add the dry ingredients to the wet ones in batches till the mixture is fully incorporated. Use cut and Fold method using Spatula (No mixer).

Preheat Oven to 180C / 350 F. Grease a loaf pan and Dust it ,or you can place a parchment paper
Pour the batter into loaf pan . Tap it to level of batter and remove any air bubbles.
Step 9
Now Sprinkle the top with Melon Seeds, Flax seeds, Chia seed and a few Oats and about 1 tbsp of Walnut. Now bake in oven for 40-45 min, till you get a golden brown Crust.
Allow to cool
De-moulds and Slice it

Enjoy it warm with a cup of Coffee and A tangy Jam like Plum jam or Plum Chutney
