INGREDIENTS FOR THE OATS UPMA


1) OATS 1C

2) RAWA 1/4 C

3) CARROTS 1 DICED

4) ONION 1 MEDIUM

5) TOMATO 1 MEDIUM

6) GREEN PEAS 1/4 C

7) CASHEWS 1 TSP

8) GROUNDNUT 2 TSP

9) CURD 1/4 C

10) GINGER 1TBSP GRATED

11) SALT 1TSP( AS PER TASTE)

12) SUGAR 1 TSP (optional)

13) WATER 31/2 C

14) CORIANDER 1TBSP

15) CURRY LEAVES 8-10

16) OIL 2-3 TBSP





Instructions


Step 1

 

Take 3 and ½ C of water to a boil. Add 1 carrot finely diced to the water. Add ¼ C green peas frozen or fresh to the water . Add a little salt and allow to simmer at the side.

Step 2

 

In a pan add 1 tablespoon of ghee or clarified butter and add 1/4C of rawa or semolina to it. Sauté for 4 to 5 minutes so that the Semolina become slightly puffed up. Keep it at the sides.



Step 3

 

In a wok take 2-3 tbsp of oil . When the oil is heated add 1tsp of mustard seeds when they start spluttering add 1 tsp of cummin seeds or jeera .


Step 4

 

Add a pinch of asafetida. Add 1 tsp urad dal or blacks split gram. Add1 tbsp of cashews and fry them golden brown Now add the Now add 2 tbsp of Ground nuts and saute them well.


Step 5

 

You can add some grated ginger if you like. Add green chilies (2-6) depending on your spice level. Add 1 large onions finely chopped and Sauté them .Add some salt and water this ensures that the onion remains soft and juicy .



Step 6

 

Add the tomatoes and Sauté them well. Cover and cook for 4-5 minutes

Now add the roasted rava/semolina to this Masala. Sauté . Now add one cup of oats preferably quick cooking oats. Mix it well . Add a ¼ C of yoghurt or curd

Step 7

 

And now at the boiling water that was simmering on the sides. Add some sugar to balance the soreness of the curd and some salt as per your taste.

Step 8

 

Give it a nice mix till it incorporate the entire mixture and keep it covered. Cook covered for 4 to 5 minutes .

Step 9

 

Now uncover and your Oats Semolina Upma is ready. Serve it hot and garnished with coriander. Eat it with a pickle of some sort If you like .
