Spouted Moong or Green Gram idlis are an answer for those looking for a power breakfast. Rich in Vegetarian protein, fiber and carbohydrates, these Steamed cakes will give you your Nutrients at the start of the day. Also, our digestion system is the strongest at the start of the day so it can take the burden of nutrients and digest them properly and help to keep you energized on your busy mornings. Add Veggies of your choice like grated Carrots, grated beets, peas, corn etc. We have added rice but it can be skipped keeping remaining portions intact. Addition of Rice will puff up the idlis. If you don’t have Sprouted Green Gram use soaked ones (soak for 4-5 hrs).These keep you full for a longer time and stop the inter meal cravings. Make it with any chutney of your choice. Portion Size : ( 20 Idlis)

Cook Time : 10 min


Prep Time : 10-12 hrs (Including time for fermentation)

Serves : 4 people

Ingredients

  • SPROUTED GREEN GRAM 1C

  • IDLI RICE 1/2C

  • SPLIT BLACK GRAM ½ C

  • FENUGREEK SEEDS/METHI SEEDS 1TSP

  • BREATEN RICE OR POHA 2 TBSP

  • ROCK SALT 1 TSP



Instructions for the Sprouted Green Gram


Step 1

 

Wash and Soak 1 C of Green Gram or Akkha Moong for 5-6 hrs. Then drain and allow to sprout.


Step 2

 

Wash and soak the udad daal or black gram daal for min 3 hour. Add 1tsp fenugreek seeds to this soaked daal.


Step 3

 

Adding rice is optional, it gives a nice rise to the idlis which come out otherwise flat, though spongy. If you plan on adding, do soak some idli rice for 4-5 hours. Just before grinding soak the poha for 10 min .


Step 4

 

Now drain and grind all these soaked Daals and rice into a smooth paste. Add ½ C to 1 C of water of you want to ease the grinding process.

Step 5

 

Ferment for 4 hours or overnight. Add 1 tsp of rock salt as this will not interfere with the Fermentation


Step 6

 

Keep in a large vessel as the batter will rise after fermenting and overflow from the vessel.

The next day you will observe the risen batter with lots of air bubbles. Now add some more salt if required. Give it a nice stir.


Step 7

 

Start boil like water in an Idli Cooker or a pressure cooker. Grease the idli Stand pour 1 dollop of batter in each mould and assemble the entire stack of trays. Now give it a tap to even out the batter. Place in Hot cooker and Steam for 10-12 min. Check with toothpick, it should come out clean.


Step 8

 

De-mould and serve hot with chutney of your choice. We have made the tomato and Ginger chutney
