Methi Bhajani Thalipeeth|How to make Bhajani Thalipeeth| खुसखुशीत भाजणीचे थालीपीठ
Thalipeeth is a regular breakfast in the Maharashtrian Household. It is made with Bhajani flour which has the goodness of lentils, cereal, pulses and spices all included with their husk and skins. Bhajani is a hi-protein, hi fiber dish often mixed with vegetables to make it easily digestible. You can add Greens like Spinach, Methi leaves and coriander leaves or onions, tomatoes, grated carrots or pureed red pumpkin. In our recipe we are using Methi or Fenugreek and coriander and onions. The thalipeeth becomes a complete meal and is very ideal for breakfast.
Enjoy it with bowl thick fresh yogurt or cream or maakhan/loni(cream in Marathi)
Methi Bhajani Thalipeeth
Portion Size : ( 8-9 thalipeets)

Serves : 4 people
INGREDIENTS FOR THE THALIPEET (8-9 small)
1) BHAJANI 2 C
2) METHI LEAVES 1 C (or more if you like)
3) ONION 1 C
4) CORIANDER 1\2 C (or more if you like)
5) OIL 2 TBSP
6) SALT 1 TSP
7) DHANIA JEERA PWD 1 TSP
8) TERMERIC 1 TSP
9) GREEN CHILLIES DICED 1 TBSP
Instructions for making the Bhajani
Step 1
In a mixing bowl take two cups of bhajani flour
Now add the cut onion pieces.
Add the Methi/Fenugreek leaves.
Add the Coriander leaves.
Add the dhaniya-jeera Masala.
Add the Chili powder.
Add the Turmeric powder.
Add the rock Salt .
Add Normal Salt.
Add the Sugar.
Add the Turmeric Powder.
Step 2
In a mixer at the coriander seeds add Kasauri methi Now grind the mixture coarsely. Add this mixture to the bhajani mixture
Step 3
Add half cup of water and start Kneading the dough ,add water as you require and make a and somewhat tough dough.Add 1 tablespoon of oil , and incorporate into the dough . Allowed the dough to rest for 5 to 10 minutes. Portion the dough into 8-9 balls and flatten them into disk(like pedhas)
Step 4
Now on your on your rolling platform place cling wrap or plastic bag cut Length wise and Breath wise, to form a plastic sheet. Cover the rolling platform with this sheet
Step 5
Now grease the plastic sheet with water and place a flat ball onto the rolling platform and start dabbing /extending the edges to form larger disk. When the disc is around 3 inches in diameter , Make a hole in the centre.
Step 6
Heat a flat pan .Grease the pan. Place this thalipeeth on the heated pan.
Place the thalipeeth on to the pan coat it with oil. Now cook covered for 2 to 3 minutes. Keep flame low.
if you like a little crusty browning(which i highly recomend) keep flame on mediuum and cook for anothr2-3 min. Be vigilant, Do not burn ;)
Step 7
Now uncover check for slight browning. Now add oil through the hole in the center now flip the thalipeeth And let the other side also cook. The thalipeeth will emanate a wonderful mouth watering aroma.
Step 8
Now repeat this procedure for all the dough balls. Make 8-9 thalipeeths.
Enjoy this with cream/maakhan/loni or a bowl of thick curd.
