Sanja




This is a Quick cooking Flavorful and very popular Maharashtrian breakfast. Made with Semolina it is also referred as yellow upma. It is savory and filling, makes it more nutritious by adding Vegetables of your Choice like carrot pieces, Green Peas, Golden Corn.

Enjoy it Hot with mango pickle and freshly grated coconut and Loads of coriander.

Ingredients


1. Roasted Rawa 1.5 C

2. Water 5 C

3. Green Peas ½ C

4. Oil 2 tbsp

5. Green Chilies 2-6

6. Curry Leaves 12-15

7. Mustard Seeds 1 tsp

8. Cumin Seeds 1 tsp

9. Turmeric powder 1 tsp

10. Asafetida ¼ tsp

11. Garlic 5-6

12. Salt 1 tsp

13. Sugar 1 tsp

14. Yogurt ½ C

15. Coriander Stalks 1 tbsp

16. Coriander Leaves 2 tbsp

17. Coconut ¼ C

18. Ground nuts 2 tbsp

19. Cashews 8-10



Instructions

Step 1

 

Boil 51/2 C of Water in a vessel. Now add ½ C of Green Peas. Add a little Salt and keep it Simmering at the side .

Add 1 tsp of mustard seeds, they should Splutter immediately, then add 1 tsp of cumin seeds, they also splutter immediately.

Step 4

 

Add ¼ tsp of asafetida to the oil; now add 1 tsp Turmeric Powder.

Step 5

 

Add 1 inch of ginger grated and 5-6 garlic cloves finely diced to the oil. Fry the Ginger Garlic till they loose their raw flavor.

Step 6

 

Add chopped green chilies about 2-6 and 12-15 curry leaves to the oil and fry them well. Add 1 tsp of chopped coriander stalks for the flavor.

Step 7

 

Now add 1 large Onion Chopped finely. Add some Salt and Water to soften the Onions faster.

Add 2 tbsp of Ground nuts and fry them, then Add 8-10 Cashews fry them golden brown.

Step 9

 

Add 1.5 C of Rawa/Semolina and add 1tbsp of ghee to roast this Rawa/Semolina. Give it a nice mix so the ghee and oil coats the rawa and roast it properly for 2-3 min. Do not skip this step as the Sanja will be lumpy otherwise.

Step 10

 

Add ½ C of yogurt to the Roasted Rawa/Semolina. Add Salt 1 tsp or as per your taste, and add 1 tsp of sugar

Give it a nice mix.

Now add the water which is now boiling and has cooked the Green Peas.

Mix and cook covered for around 7-8 min.


Add 1 tbsp of ghee on top add 1 tbsp of lime juice.

Step 13

 

Garnish with chopped Coriander leaves and freshly grated coconut.

In a steel bowl place chopped coriander and some coconut and place the cooked Sanja and level of the bowl. Now upend onto a serving plate to have a semi circular mound of Sanja



Enjoy it hot with some mixed pickle, or mango pickle. You can sprinkle some thin sev on top too. Dig In.
