Sweet Potato Carrot Soup is just right for rainy days where you want to curl up with a book and some filling Hot Soup. We have added a dash of spice but still is a pretty mild flavored soup. This soup not only looks yummy with its striking color and the added crunch of roasted seeds..it really comes out tasty

Ingredients for Soup
1) CARROTS 2C
2) SWEET POTATO 1C
3) ONION 1 MEDIUM
4) TOMATO 1 MEDIUM
5) WATER 3 C
6) CORIANDER SEEDS 1 TSP
7) CUMMIN SEEDS 1 TSP
8) BAY LEAF 1 NO.
Ingredients for Garnish
1) SWEET POTATO PIECES ½ C
STEAMED
2) MELON SEEDS 1 TSP
3) SEASME SEEDS 1 TSP
4) PUMKIN SEEDS 1 TSP
5) CHILLI FLAKES 1 TSP
6)ONION SEEDS ½ TSP

Instructions for Soup
Step 1
In a Soup pan add 1 tsp of coriander Seeds and
1 tsp of cumin Seeds and 1 bay leaf. Now dry roast the Spices
Step 2
Now add 1 tbsp of ghee, when it melts add 1 medium onion finely chopped, let it softens and now add 1 medium tomato finely chopped. Sauté for some time.Now add 2 Carrots finely chopped and 1 C of Sweet Potatoes finely chopped.
Now add 3C of water. Cook Covered or 20 min.
Step 3
In a pan roast add 1 tsp of melon Seeds, 1 tsp of Pumpkin Seeds, 1 tsp Sesame Seeds and cumin seeds. Dry roast them golden brown.
Step 4
Now keep some boiled sweet potato aside, add some salt, pepper and chill flakes and make small balls of this spiced sweet potato and add to the soup.
Step 5
Now uncover and add the salt and sugar .Cool strain and blend the veggies and mix them together.
Allow the Soup to simmer for some time. Now Serve in bowls and garnish with cream.
Step 5
And garnish with crusty seeds. And enjoy the soup Hot. It can be a standalone soup or can be enjoyed with a bread of your choice.
