Cream of Spinach Soup with Mushrooms
Spinach mushroom is a must try this winter season. Its creamy texture and balmy flavors are ideal winter dinner. Accompany them with a bread of your choice, if you wish or this soup is quit filling to form a complete meal its self.

Ingredients
SPINACH 2 C
ONION 1 MEDIUM
POTATO 1 MEDIUM
GARLIC 3 PODS
DESI GHEE 2TBSP
MUSHROOMS 7-8
WATER 1/2 C
MILK 2 C
SALT 1 TSP
SUGAR 1/2 TSP
PEPPER 1/2 TSP
Instructions for the Sprouted Green Gram
Step 1
Boil 3 cups of water, Add 2 C of chopped Spinach. Allow it to blanch for 5 minutes,
Then add to an Ice bath, i.e. drop it into. This will stop the process of cooking and retain the green color of the Spinach
Step 2
Heat a pan and drizzle some olive oil , add two vertically sliced mushrooms Sauté till they are cooked. Season with a little salt. Now keep aside for cooling. We shall use them for garnishing
Step 3
In the same pan add, add 1 tsp of ghee. Now add three pods of garlic finely chopped into the ghee and sauté till they looses the raw smell.
Step 4
Now add a bay leaf and sauté that too. Add 1 medium sized onion finely dice and sauté till it softens.
Step 5
Now add 3-4 mushrooms roughly chopped and sauté till cooked.Add 1 medium sized potato cut into cubes and sauté till cooked.
Now add ½ c of water and cook covered for 5-7 min.
Uncover and now drain and allow to cool.
Step 6
Also drain the Spinach and add to a mixer jar, Add to the onion, potato and mushroom mix and blend into fine puree.
Step 7
In the same pan add 1 tsp of ghee or butter and add 2 tbsp of whole wheat flour sauté the mix for 2-3 min. Now add 2 cups of milk and mix with a whisk so that all the lumps are removed.
Now add the Spinach puree and mix with a whisk so that the mixture is nicely incorporated. Allow this mixture to simmer for2-3 minutes your soup is ready.
Step 8
Garnish it with cream and the sautéed mushroom. Enjoy it hot as a complete meal or any bread of your choice..
