Keshar Shrikand Recipe is specially made on the auspicious occasion of Dussehra. Enjoy this creamy Sweet, butter textured desert with hot pooris, the combination of Spices, dry fruits and sweetened yogurt make a mouthwatering combination. Addition of cardamon,nutmeg and Saffron gives it a winning combination. Make this recipe once from Scratch with all homemade casually available ingredients and never opt for preservative filled store brought shrikhand.

Keshar Shrikhand

Portion Size : ( 500g Aprox)

Ingredients

· INGREDIENTS

  • SUGAR 1.5 C(or more)

  • HUNG CURD 2 C


  • ALMOND FLAKES 1TBSP


  • CASHEW PIECES 1TBSP


  • SAFFRON 5-6 STRANDS


  • MILK MASALA 1 TBSP


  • NUTMEG 1/2 TSP

Ingredients for Pooris


PORTION SIZE ( 2 persons 7-8 pooris)

INGREDIENTS FOR POORIS

  • WHEAT FLOUR 1


  • RAWA/SEMOLINA 1TSP


  • OIL 2TBSP


  • WATER 1/4 C (APROX)


  • SALT 1 TBSP



Instructions for Shrikand

Step 1

 

Now add one teaspoon of yogurt Culture to the warm milk. Stir it nicely so that the culture gets evenly distributed throughout the milk .Now cover it and keep it in a warm place Thecurd will set after 4 to 5 hours. If you stay in a cooler place it Is best to keep in a warm oven .

Step 2

 

Place a deep dish and a colander in it .Keep a cheesecloth over the sieve. Now pour the curd into the muslin cloth,. Gather the edges of the muslin cloth together . Tie it with a string .

Hang the yogurt over the sink over night, this will ensure that all the water from the yoghurt has dripped off. This gets the best results.

Step 3

 

However if you are pressed for time you can keep this tided yogurt under a under heavy weight The pressure will press of all the water away from the curd . keep for 1 or 2 hrs.

Step 4

 

In the meanwhile powder the sugar Into a fine powder . Also slice the dry fruits that you are going to add into the shrikhand

Step 5

 

Now in a metal bowl play a place the place the hung curd. Adding the sugar powder.

Now mix thoroughly with the spatula . Allow to rest for 5 to 10 minutes the sugar will melt completely .

Step 6

 

How to remove and all the lumps we will blend together with hand blender.

Blend it for 4 to 5 minutes approximately to remove all lumps Now add in the dry fruits like almond flakes, cashew flakes, and pistachios. Ad in the spices like nutmeg, cardamon, or you can add milk Masala Masala.

Step 7

 

Also add in saffron( which has been soaked in one tablespoon of milk for approximately 30 minutes )

Add the saffron milk into the shrikhand. This will give nice aroma and also it gives a slightly yellowish tinge to the shrikhand . So it is called Kesari Shrikand


Now you are homemade shrikhand is ready

This is without any preservatives And all the ingredients are fresh.


Instructions To make the Pooris

Step 1

 

Take one cup of whole wheat flour in a mixing bowl

Step 2

 

Tablespoon of rawa/Semolina.

Step 3

 

Add the salt as per taste.

Step 4

 

Getther the floor. Ad very little water and now startkneading the dough by adding very little water .

Dough has to be tough. If the dough is become soft by adding too much water it is very difficult to repair the dough. So be careful about adding water add 1 teaspoon at a time

Step 5

 

Allow to rest for 5 to 10 minutes . Portion the dough into 6-7 balls . Flatten them

Step 6

 

Now roll each ball into 3 inch diameter disks or puris. Keep them thick ( around 2mm )

Step 7

 

Heat oil in an Iron Wok. To Test temperature of oil, Add a small piece of dough, it should start frying

Step8

 

Now add the poorees into the into the hot oil Do not disturb the puri as it is frying.

When it will rises up , now flip the puri. The other side also should fry. Puri should be nice crusty brown from both sides.

Remove from oil and place on tissue paper to absorb the oil

Enjoy the hot purees with shrikhand
