Gulkand Karanji | गुलकंद करंजी|Gulkand Gujjiya |Diwali Special Quick recipe
Karanji or Gujjiya is a must do recipe in this festive season of Diwali. Gulkand Karanji is a nice variation given to the traditional Karanji /Gujjiya which is made with either desiccated or fresh coconut.
So this Diwali make these rose infused delicacies along with the traditional ones. You can add pink food color to the covering which gives it a nice pink shade. Now enjoy these flavor full Karanji. They have a crunchy crust with a soft gooey center filling, whose tantalizing flavors will explode in your mouth.

Ingredients for the Filling
FRESH COCONUT 1 C
GULKAND 2-3 TBSP
MILK POWDER 2TBSP
SUGAR 1/C
CASHEWS 1/4C
MILK MASALA 1 TBSP
Ingredients for the Covering
MAIDA 1C
RAWA 3 TBSP
GHEE 2 TBSP
MILK ½ C
SALT ½ TSP
PINK ¼ TSP
FOOD COLOUR ¼ TSP
Instructions for the Filling.
Step 1
In a pan add 1 tablespoon of ghee
When the Ghee/Clarified butter melts, add 1 cup of fresh freshly grated coconut Sauté for sometime.
Step 2
Add 1 Cup of sugar Sauté till the sugar is dissolved.
Step 3
Add 2 to 3 tablespoons of Gulkand. Give it a nice mix so that the Gulkand will get mixed with the coconut properly.
Step 4

Step 5
Add 1/4 cup of cashews.
Step 6
Add 2 tablespoons of milk powder. Mix well.
If you do not have milk powder, and 2 Tbsp regular cream or malai.
Step 7
Allow to cool .best prepared one day in advance.But you can allow 20 Min cooling time if you are making immediately.
Instructions to make the Covering.
Step 1
In a mixing bowl add one cup of Maida/ flour. To it add 2 tablespoons of Rava/Semolina. Add 1 teaspoon of salt. Add 2 tablespoons of hot ghee or clarified butter as mohan.
Step 2
Now make food color mix by add ¼ tsp of Pinks food color to some milk. Added it to the dough
Step 3
Start gathering the dough by adding little by little of milk Since we want a tough dough add the milk carefully. We have a nice pink dough formed. Keep covered and allow to rest for 15 minutes.
Step 4
Now make equal portions of the dough. Roll out a circular disc and add the filling on top of it and fold over .To Seal the edges you can use milk or plain.
Step 5
Start folding at the edges and to form a ridged edge. Now fry in medium hot oil till both sides are slightly browned. So the color remains intact. Do not use very hot oil as it may brown the surface and you will loose the pink color.
