Besan Laddu with Jaggery Recipe | No Sugar Besan Ladoo | How to make Healthy Besan Laddu with Jagger

Ingredients for Besan Jaggary Ladoo

  • BESAN COARSE 2C

  • GHEE/CLARIFIED BUTTER ½ C

  • JAGGERY 1& 1/4C

  • CARDAMON POWDER 1TSP

  • MILK ½ C

Instructions for the Besan Jaggery ladoo


Step 1

 

In a pan, melt ½ C of Desi Ghee or Clarified Butter.




Step 2

 

Now to this add 2 C of coarsely ground Chick pea flour or Besan. This gives a very grainy texture to the ladoo, which we want. If you have finely ground Besan instead, then add 2 tbsp of rawa to give the grainy texture.


Step 3

 

Now mix the besan and ghee well so the Ghee coats the besan evenly. Now sauté the besan on low flame for around 25-30 min. Tedious but gives the result, it yields evenly roasted besan ladoo that do not stick to the roof of your pallet.

Step 4

 

You can alternatively roast the besan and ghee mix in the microwave, on full power for 1 min cycles. Repeat this cycle 1 min nuking for 5-7 min as per the capacity of your Microwave. Results are similar if you’re ok with using so much of microwaves on your food. We always make will recommend the traditional way.


Step 5

 

When the besan is roasted, it will become light as your sauté and also it will become yellow ocher-ish shade. It smell heavenly too.That is about, in 30 minutes it should be done(No Shortcuts ;) ). Now add ½ C of milk to this roasted besan, it just enhances the texture of besan.. Believe me it is a game changer.


Step 6

 

When the milk if full incorporated add the jaggary. You can use grated or powdered Jaggary. I have used organic one which is rich dark brown in color and smells heavenly. So the ladoo become slightly dark brown in shade then the one made with sugar. We have recommend 1and 1/4 C of jaggary, but if you like a sweeter taste you can make it 1 & 1/2 c.


Step 7

 

Mix this well on very low flame till the jaggary melts and mixes completely with the besan. Let it cool for 10 min. You can add dry fruits Powder if you want.
