Egg Curry is Flavorful, Rich, spicy Onion and tomato gravy with oil oozing on the sides teamed up with boiled eggs and a with all the traditional Indian Spices. It pairs perfectly with roti naan or paratha or any mildly flavored rice of your choice
Egg curry is reminiscent of the Spicy flavors you get in Dhabas, these are rustic food outlets you encounter along Highways. Trips. You get delicious food here sans the elaborate dishes in the menu in those places but you will definitely get hot fresh Naan, Tandoori roti, rice, authentic Indian curry with egg, chicken, and vegetable of course with lots of onion, lemon, and green chili and specialty seasonal pickles on the sides.

BOILED EGGS 6-8
OIL 3 TBSP
CLARIFIED BUTTER 1 TBSP

Instructions
Step 1
Boil 6 to 8 eggs in a vessel Boil for 8 to 10 minutes and then scope them with a spoon and drop them in Ice water and allow them to cool. They become easier to peel.
Step 2
In a Wok take 3 tablespoons of oil and 1 tbsp of Ghee or clarified Butter. To that add 2 green cardamon pods, 1 inch of cinnamon broken into pieces 1 tsp of Cumin Seeds or jeera, 1 tsp of coriander seeds to this add 4-5 peppercorns, 1tsp of fennel seeds
Step 3
Finely chop 4 to 5 cloves of garlic add to the masala. 1 inch of ginger grated. Sauté this mix till the ginger garlic loses its raw flavor .Add 2 medium onions roughly cut them. Sauté them for sometime Add a little salt and water to keep the onion soft and juicy.
Step 4
Now add three tomatoes finely chopped. Fry them for some time then add Are 2-6 kashmiri red chilies this gives the gravy a nice red color. Add 1 tbsp of desiccated coconut this will give the gravy a nice thickness.
Step 5
To add the thickness at 8 to 10 soaked cashews and 2 tablespoons of soaked melon seeds. This is optional, but it give the gravy a rich creamy texture.
Add a little coriander-cumin masala. 1 to 2 teaspoons of regular chili powder this is for the spice and not the color. So add it as per the spice levels you enjoy.
Step 6
Add 1 tsp of salt or as per your taste. Cook covered for 10 to 12 minutes. Uncover and allow to cool. Then blend the mixture into a fine paste.
Step 7
In another wok add 1 C of water , add 1 tsp of oil and 1 tsp of ghee,1 tsp of turmeric powder and 1 tsp of Kashmir red chili powder, Now allowed this watery mix of masala to Simmer for another 5 minutes. Add the blended masala to and let it cook till the masal oozes out oil.
Step 8
In the meantime you can remove the shells of th now boiled eggs . Give vertical slits to the eggs along their surface. Add all the 6-8 eggs that you have boiled into the masala. Coat the eggs with gravy so that the masala enter into the slits. Cook covered for 5 to 7 minutes.
Step 9
Now crush 1 tsp of Kasuri Methi or dried Fenugreek leaves, within the palms such that it releases its aroma and sprinkle over the gravy.
Step 10
Add ½ C of water to mixer jar and rinse the leftover masala and add to the gravy, this makes the the consistency a bit watery, especially if you are accompanying this egg curry with some rice.
Step 11
Finalized the taste now by adding some salt and some chili powder if you want at this time. Finally add 1 tsp of Garam masala to this makes and allow the gravy to simmer for another 5 minutes.
Step 12
Garnished with coriander and your spicy egg curry is ready to devourer. Accompany it with some Rotis or paratha or any flatbed of your choice or some mild flavored rice like jeera rice. Enjoy this gravy hot.
