Ingredients
For the Filling
------------------
Seseme/Til 1 C
Desicated Coconut ¼ C
Jaggery 1 C
Clarified butter/Ghee 1 tbsp + 2-3 tbsp while roasting
Besan/ Chick pea Flour 2tbsp
Poppy Seeds 2 tbsp
Cardamon 1tsp
Nutmeg 1 tsp tsp
For the Covering
---------------------
Whole wheat flour 1C
Flour 1C
Oil 3 tbsp
Salt ¼ tsp
Rice Flour 2-3 tbsp for Dusting
Instructions
Step 1
In a mixing bow add 1 C of Flour or maida, to this Add 1 C of Whole Wheat flour.
Add ½ tsp of Salt and Make a Well in the center.
Add 3 tbsp of hot oil in the center .
Step 2
Now rub the flour with the oil so that the crumbs are formed now add about ½C to ¾ C of water and knead into a soft dough.
Coat with Oil
Cover with a kitchen towel and allow to rest for 20-30 min.
Step 3
Now to make the filling
In a pan Dry roast 1 C unpolished sesame seeds, till they start spluttering. Remove from the Gas and allow to cool
Step 4
Dry roast 2 tbsp of poppy seeds for 4-5 min on sim and keep aside and Allow to cool.
Dry roast ¼ C of Desiccated coconut for 2-3 min on low frame till it become pink. Keep aside and allow to cool.
Step 5
Add 1 tbsp of Ghee/ Clarified butter and add 2 tbsp of Chick pea Flour or Besan and roast for 4-5 min on sim. Keep aside and Cool
Step 6
Now Grind the cooled Sesame seeds . poppy seeds and desiccated coconut, by inching the mixer, grind in to a coarse powder.
Step 7
Now grate the Jaggary or use jaggary powder now available.
In a food processor jar add the jaggary, besan, ground Sesame seeds and coconut mix. Use the S blade i.e the one used for kneading.
Step 8
Add 1 tsp of Cardamon Powder, grate 1 tsp of Nutmeg. Now grind it so that all ingredients get mixed properly and no clumps remain.
Step 9
Now check the dough, knead it a bit and portion off the dough into 9-10 balls.
Flour the rolling rolling platform with rice flour. Roll out a disk on the platform about 3 inches in diameter.
Step 10
Make a cup out of it in your hand . Now place the filling in the cup.
Press down to accommodate more filling. Now join the edges and remove off excess, and make into a stuffed ball.
Flatten it and also flatten the edges.
Step 11
Again roll out a disk of about 4-5 inches in diameter. You can make larger ones too.
Heat a pan and place the rolled poli on the pan. Kepp the flame on medium and alow to cook on one side for a minute.
Step 12
Now flip and grease with Ghee/ Clarified butter on one side. After a min or two. Again flip and grease other side.
Step 13
You will see that it puffs up nicly into a ball.
Step 14
And you Til Gul poli is ready to eat with a Dallop of Ghee..
